THE ART OF BLENDING @Talisman

Our recent Art of Blending experience at the Talisman cellar door gave guests the opportunity to explore one of the most fascinating parts of winemaking – discovering how individual varieties come together to create a finished wine.

Held at our cellar door in the Ferguson Valley, Western Australia, the tasting began with three wines from the 2024 vintage: our Cabernet Sauvignon, Malbec and Cabernet Malbec. Tasted side by side, they provided an opportunity to discover the individual character of each variety before seeing how they work together in a blend.

Why Cabernet and Malbec? Cabernet Sauvignon and Malbec are classic blending partners, with a long history together in Bordeaux and, today, in wine regions around the world.

Cabernet brings structure, fine tannins, dark fruit and length, providing a strong framework and excellent potential for ageing. Malbec brings generous plum and dark berry fruit, colour and a rounder, more approachable texture. Together, the varieties can complement each other beautifully – Cabernet providing the backbone and Malbec adding richness and generosity.

But there is no single perfect formula. Vintage conditions, fruit character, barrel selection and the style the winemaker is looking to achieve can all influence the final blend.

Guests were given barrel samples of our 2025 Cabernet Sauvignon and 2025 Malbec and invited to create their own blend. By experimenting with different proportions, it quickly became apparent just how much difference even a relatively small change can make.

More Cabernet could bring greater structure and firmness; increasing the Malbec could change the fruit profile, texture and generosity of the wine. Comparing the different combinations offered a glimpse into the decisions that take place in the winery before a final blend is chosen.

There was no ‘correct’ answer. The exercise was about tasting, comparing and finding the balance each person preferred – and discovering just how subjective the art of blending can be.

And then we opened our 2021 Cabernet Malbec! After exploring young wines and freshly blended barrel samples, tasting an older Cabernet Malbec demonstrated how these varieties can evolve together. With time, tannins soften, flavours integrate and the wine develops greater complexity. It also highlighted something that has always been important to us at Talisman – making wines with the structure and balance to develop beautifully in bottle.
